I'm in a bit of a situation as my physical SIM was disconnected and the esim that is sitting in myo2 app doesn't want to work either, so I currently have no network on my main number.

I need to access my O2 account but as you will know it is asking me for a text code and my main number which I obviously can't use and watch number are listed but the watch number doesn't seem to accept any texts through it's own number and only incoming calls? Is there a way to get it to accept incoming texts?

All we know about esim acivation is in this guide

eSIM - How to activate

You need to contact customer service
We’re just customers like you but it sounds like you’ll need someone to access your account which can’t be done from here. If you message O2 using the links below, they should be able to help you with this
or give them a call on 202 or 0344 809 0202

I'm not looking to activate an esim but thanks. I need to access my O2 account but only have the watch number active but any texts sent to that number aren't received on the watch. I'll just wait for my main number to come back online if the watch can't receive texts on its own number.
