Iphone 7-Iphone 12 and Apple Watch

Hi there, first of all let me try to explain my problem, I cannot update my iphone 7 to the latest IOS so I can unpair my apple watch series 5 which needs an update then copy the data from my iphone 7 to the new iphone 12 I have. Would I have any issues just unpairing the watch from my iphone 7 and pairing it to the 12 without the latest update or could it be updated once i'm using the 12?

@Dairylegend  I'm not an iPhone user, but it would make sense to me to migrate your data from your old phone to your new one first, then update the watch with the new phone. If you're uncomfortable with my advice, and I certainly wouldn't be offended if you were, then I suggest you contact Apple support and ask them.
