I want to change from my current Nokia phone to a new (for me) iPhone. Can I just take the sim card out of the nokia and put it into the Apple? I would need to keep the same number. Would I need to upgrade my account to handle more data?

If the sim fits then you could use it. However, you would need the iData bolt on which can only be done by customer services.
I am on a sim only tariff (with a Samsung) and am always asked if I have an iPhone.
A new sim would be 5G capable and if your phone is, you may want a new sim and do a sim swap to keep your number Guide: Sim Swap: a mini guide 2017 update
I always think it's better to go instore. They would transfer everything over for you and hopefully ensure you have the iData bolt on.
