I have requested a new e-sim but I can't access the My O2 app on my phone because it is a new phone and I have no mobile service so I can't receive the security code via message to get in. Therefore, I have no way to get any mobile service on my new phone. Please can you advise?

You need to call O2 or pop up to any store and get help from the support - no other way.
