Is there a way of retrieving a voicemail message I accidently deleted?

Unfortunately not unless it was backed up. I believe there are ways with iPhones but not with other phones and O2 don't keep them.

If you think you may want to save them in future you can record them with an app called "Audacity" or switch over completely to Google Voice https://voice.google.com/u/0/about
