My current plan is £10 for 7GB, I see the website has £10 for 10GB. If I do the top up, how many GB I will get?

You'll get 7gb.

If you want the 10gb deal you need to get a new sim and migrate your number.

I am using PAYG with £10/7GB. What I should do after I order the SIM for £10/10GB? I browse the link, it doesn’t mention about PAYG to PAYG swapping.
