Since running an update in my iPhone yesterday I don't have the option to delete emails???
Try doing a hard reset:
Hold both the sleep/wake button and the Home button. Keep holding them both until you see the white Apple logo appear, once you see this release both the buttons.

OOOOoOooooooo, looks like I have found a way to do it
Following the link above and complete it making sure you type in the worrd, 'INBOX' in capitals and then you will be able to delete emails from your Inbox.
It worked for me great
It will also add a new Trash can that you will then just need to go into and complete a full delete and off the iPhone for good

Sounds like a bodge
Even if it is a sort of bodge, it works for me and everyone else I hope.
At least we can empty out our old emails now
