As per the title really, I am an O2 customer with a Pixel6 pro looking at the galaxy watch. I assume if I do buy it the esim becomes useless as the two wont connect or is there a way around it?

Watch 5 should connect to any Android phone running Android 8.0 or higher.

I wouldnt bother, its buggy has hell with the Pixels, and you lose quite a bit of functionality... 

My advice wait for the Pixel Watch to be released.
