Slightly confused..
So my contract ended last month and I wasn't bothered about upgrading to a new phone so instead I just upgraded to a sim only contract. This month my bill says -15.71, non of my previous bills have ever shown a minus sign, the money hasnt been taken either, but it says paid?? I'm so confused!

As you paid a month in advance last month and you dropped to a cheaper tariff during that month, O2 have credited your account.
A minus value is a positive account balance so your bill has been paid from the credit you had and there is £15.71 carried forward as a credit for next month.
