On o2 it needs to be linked to a pay monthly contract, there is no other way to do it on o2. (it will get its own number but will only use that for data)
The Apple Stores know this.

Short answer is that you can't, sorry.
To setup on a different number you must pay off the watch plan then O2 will release it from your account and allow it to be sync'd with another number.

In that case you'll need an iPhone with an O2 pay monthly sim to use it with O2 or a vodafone or EE sim who also support the Apple watch

I have my iPhone with monthly contract connected to my Apple Watch which is not cellular to. I would like to add my daughter watch which is cellular to it too but have it’s own number. The apple shop said I could do this as an addition to my contract with an esim? Is this a possibility?

So does that mean I need to get another pay monthly mobile and link it that way and can’t take just another contract and link through my phone.
the apple shop told me she didn’t need her own phone. How annoying, the whole purpose was to prevent her having her own phone. (Trying to prevent social media)
thanks for your help

Which ever way you do it, the apple watch needs to be linked to a phone, it can't be used as a standalone device.
Apple have told porkies...
