The last couple of times I've tried to pick up voicemail messages, I receive an automoated message saying that my PIN has been set to Default, and that I need to change it.
Having not previously set a PIN for my voicemail, I don't understand why I am now being asked to do this?
I haven't tried to reset the PIN (it wouldn't bother me if I had to set one up), but I'm curious as to why I now need a PIN when for the past 18 months I haven't?

Jonsie is right the default pin for O2 voicemail is 8705 which you should change to one of your own, everybody should have a pin set otherwise anybody can listen to your messages.
This is how the News of the World and other newspapers were able to get so much information about people.
Have you not seen the Leveson inquiry in the news?

Okay, so the nice automated voice tells me that my PIN is set to default, and that I need to change it - I am then told to enter a new 4-10 digit PIN. When I try to do this, the automated voice then tells me that my PIN is incorrect. Then the call is ended. What am I doing wrong?? I only want to pick up my Voicemail!

The default pin is 8705, you may need to use that first and then change it to one of your own.
